Good ingredients have plenty to say. We give them a little heat, a hit of citrus and the space to show off. Start with sesame tuna tataki, layered with cold soba noodles, soy mushroom and shiso. Scallop and prawn har gow comes with rayu and amazu ponzu, salt cod croquettes go crisp and golden, and the char siu pork belly steam bun is rich, glossy and unlikely to hang around.
Sushi has a playful streak: the tuna sushi taco with avocado, wakame and spicy mayo, soft-shell crab uramaki with tobiko and yuzu mayo, and the flame-torched salmon tornado. For the table that wants a little of everything, there is the Sunomono sushi box. Off the grill come Hokkaido scallop, red miso lamb skewers and char-grilled octopus with sambal and shiso.
Then come the bigger decisions. Half Peking duck with house-made hoisin red currant sauce, Mandarin pancakes and fresh herbs. Char siu pork belly with a sesame soy chilli glaze. Wagyu ribeye for the guest who knows exactly what they came for. Ramen offers its own kind of comfort, from tonkotsu to miso butter and spicy tantanmen.

Billy Ho is open every day from 11am until 11pm on Jalan Pantai Batu Bolong, Canggu, near Batu Bolong Beach. Coffee, matcha and something sweet from 11am. Lunch runs from 11am until 5pm, with sushi plates and the Bottomless Lunch from noon until 4pm, and dinner from 5pm until 10.30pm.
DJs play on Fridays and Saturdays from 7pm to 10pm, and Cocktail Collective collaborations run through the year. Book ahead for the evening. Tables of 10 to 30 guests are arranged through Group Dining, and the venue can be taken for a private event.

Some Bali plans are worth leaving the villa for. Billy Ho is chef Will Meyrick's modern Japanese restaurant and cocktail bar, open all day from 11am on Jalan Pantai Batu Bolong: coffee, matcha and pastries from 11am, with a wide choice of each, a sushi lunch, cocktails after the beach, dinner off the robata, DJs on Fridays and Saturdays.
Come in from the beach and stay for the atmosphere. Dark timber, warm bronze accents and soft lighting give the room a mood of its own. Full air conditioning keeps the daytime comfortable, and two long communal tables make shared dinners feel right at home.
The kitchen works with Bali's growers and fishermen, bringing seasonal, locally sourced produce together with carefully chosen ingredients from further afield. Japanese techniques and flavours guide the menu, and influences from across East Asia keep things interesting. Order something familiar, try something that catches your curiosity, and leave a little space in the middle of the table.
The Bar
The bar is part of the experience from the first drink. A Strawberry Will Spritz makes a bright beginning. Tokyo Bloom brings yuzu and elderflower, and a Tiramisu Martini gives the evening somewhere delicious to finish.
Sake and a food-friendly wine list offer plenty more to explore, and the day starts here too, with Kintamani Arabica, Bali Robusta and ceremonial matcha from 11am. There is plenty of bar seating, walk-ins are welcome and the bar runs until 11pm.
On Fridays and Saturdays, DJs lift the room from 7pm to 10pm. Cocktail Collective brings guest bartenders and special collaborations through the year, with one-night menus you will not find the week after. Check What's On, find your next excuse and make a night of it.

Unreal! I’m a harsh critic when it comes to food, especially Asian fusion. Billy Ho exceeded my expectations, especially the tempura zucchini flower. Doesn’t sound appealing at first but it was a culinary masterpiece. The honeycomb was a nice touch. We also enjoyed the tornado salmon, galbi & tiramisu espresso martini.

Love this restaurant in Canggu! One of the best Japanese restaurants I’ve tried in Bali. I’ve been to many, and this one is definitely a standout. They have such a great variety of dishes, and the tuna tartare and Wagyu beef are absolutely amazing! Highly recommend!

My wife and I had the Feed Me 7 course meal. Omg! It was perfect. Absolutely delicious. The service was fantastic and the meals came out very quickly. Highly recommend.

è stato tutto perfetto, assolutamente non ci sono cose negative da dire. paghi sicuramente il servizio ed il cibo ma è tutto ottima qualità. siamo usciti contentissimi! Eka, la ragazza che ci ha servito tutta la sera è stata super, però sono stati davvero tutti incredibili. grazie!!

The food was excellent, and the service was good. Very nice interior. They also do yum cha for lunch. We tried the har gow(prawn & scallop) dumpling, and it was amazing. Very rich prwan and scallop taste.
